a salad a day. . .

people ask me a lot what i eat as a "vegan". 
i've been vegan for over 3 years now and the salad above is 
a consistent part of what i eat up.

i find eating as many raw foods as possible is what keeps 
my body feeling great. i would say i eat a salad similar to this everyday 
for either lunch or dinner.

it's simply:
greens {i normally do spinach}
avocado
tomato
carrots
green pepper
onion
black beans
garbanzo beans
olive oil
apple cider vinegar

*usually i will add walnuts or almonds to a salad as well.*

Yum. I love salads. Can't live with out them. I never thought of using apple cider vinegar.

I've had that exact salad, before...although, I didn't put any dressing on it, so I'll have to try it with the oil and vinegar dressing you mention.

Everyone should eat this salad...it's totally YUMMY!!

I've done a similar salad, but minus the onions and with spinach, sliced almost and sometimes I toss in dried cranberries. yummmmm!!!! Happy Monday, my sweet friend!

Looks yummy. Atria has an amazing chopped salad similar to that, it includes hearts of palms. So good!

My yummy "fruit salad" with a twist recipe:
-Spinach leaves
-Strawberries
-Blueberries
-Raspberries
-Almonds

Dressing recipe:
-Yogurt (vanilla or unflavored)
-Pom Wonderful pomegranate juice

Simply mix the yogurt and juice together and you have a yummy fruity dressing for your "fruit salad"

I know the yougurt makes it non-vegan but you can also use soy yogurt :)

I like the idea of adding avocado and olive oil to mix things up! Admittedly, I need more salad in my life. One of my favorites is a spring mix with walnuts, strawberries, and a raspberry vinaigrette dressing.

This looks totally yum! I could eat avocados & black beans every day. :)

One of my fave fruit salads that I just started making is with mango, pomegranate, and blueberries. I also use blackberries in place of blueberries. It's SO good!

I can't stop thinking about this salad and these pictures you posted! So yum. My fave thing to do with a salad lately is to marinate steamed broccoli and navy beans in lemon juice and to toss with cashews and avocado dressing on greens. :-)
